Sunset is my most favourite time of day. And at this time of year, its is extra special because it happens a minute or so later each day (I guess if I was a lark instead of an owl, I would feel the same about sunrise which is a minute or so earlier each day!) I think celebrating the lengthening of the days is incredibly important now that the excitement of the winter solstice and Christmas is over; January can feel very dark and drab in comparison to the festive season. Keep your eyes peeled for other signs of the wheel of the year turning too, like hazel catkins and snowdrop shoots. You might even want to feed your sightings into a project like the Botanical Society of Britain and Ireland's (BSBI) New Year Plant Hunt https://bsbi.org/new-year-plant-hunt or the Royal Society for the Protection of Bird's (RSPB) Big Garden Birdwatch https://www.rspb.org.uk/get-involved/activities/birdwatch/.
